When baking any type of meat, it is important to use a digital instant read meat thermometer. These are a very inexpensive investment and can make all the difference in how your meal turns out. They can alert you when your chicken is done and will also tell you if the food is undercooked or overcooked. To ensure a juicy chicken breast, it is important to not overcook it. Overcooked chicken can dry out, so it is important to check it often and remove it from the oven as soon as the internal temperature of the thickest part of the chicken reaches 165 degrees as indicated by your digital instant read meat thermometer.
Another simple but very effective tip for juicy, more flavorful oven roasted chicken is to add a little salad dressing during the cooking process. A drizzle of your favorite salad dressing, such as my homemade Zesty Italian salad dressing or a Balsamic Vinaigrette or Lemon Dressing, keeps the chicken moist and gives it some extra flavor. This step is optional, but I highly recommend it!
